MARÍA FERNANDA CABALLERO RIVAS x ABSTRACT This project proposes the design of a Manual of Good Manufacturing Practices and Sanitation Standardized Operating Procedures for the food line of Saaf S.A. Company. We propose improvements in the food safety conditions for specific food lines (liquids and solids) with this manual. Saaf S.A. is a company dedicated to the manual fractioning of solid and liquid raw materials used in food industries. Hence, being an industry with food-grade products, complying with hygiene, cleaning, and disinfection standards is essential. Otherwise, it would put the safety and innocuousness of the products at risk, which could damage or cause any illness to the consumer. This project began with a diagnosis of the current food safety conditions of the company. This activity was achieved with the support of specialized personnel of the company, using a checklist based on NB/NM 324:2013. Surveys were also conducted with the operating personnel. In this diagnosis, it was possible to identify the incomplete application of food safety standards in production processes, specific: infrastructure, machinery, transportation, personnel, cleaning, and disinfection. The causes detected allowed the development of an action plan and a proposal for a G.M.P. and S.S.O.P. manual to comply with each of the standard's requirements and a preliminary design of the layout for the food line. The technical validation regarding the redistribution of the areas (clean, intermediate, and dirty zones) was achieved by applying a quantitative matrix. On the other hand, the economic validation considers investment costs and operating expenses for the future implementation of the proposal, which obtained an approximate value of Bs. 372.951,86, equivalent to US$ 53.585,04.
