ABSTRACT The creation of a new light food restaurant project (Kilo Light) originates from the identification of a business opportunity in the gastronomic industry detected in the city of Santa Cruz de la Sierra. This opportunity seeks give a new lunch time alternative to the light food costumers, providing fast and friendly service and delicious fresh meals too. This business opportunity is crystallized after performing an economic evaluation, financial and marketing showing favorable results for this investment, on the other hand, contributes to the social aspect creating new jobs. Finally the economic, social and political of the country contribute to the realization of private enterprises seeking to not only meet the needs of financial returns if they are oriented to social responsibility.
